First a word About BarBQ Lots of people think of barbeque as what they do in their back yard on gas or charcoal fired grill. The meat is cooked HOT AND FAST - over a HOT fire so that it gets to family tummies quickly. True barbeque is meat cooked in a smoker LOW AND SLOW - low heat for hours and hours usually with a hardwood such as hickory to add smoke flavor to the meat. We use our special Piggy dry rub prior to the smoking process. Dry rubs and smoke are to enhance the flavor and never meant to overpower the flavor of the meat. This process makes the meat very tender and and allows the flavors of the wood smoke and the rub to cook into the meat. Slow cooked barbecue meats often exhibit a pink ring around the outside edge of the product. This pink ring may range from 1/8 inch to 1/2 inch thick. In beef the ring is a reddish-pink and in pork, chicken and turkey it is bright pink. This pink ring is often referred to as a "smoke ring" and is considered a prized attribute in many barbecue meats, especially barbecue beef briskets. Barbecue connoisseurs feel the presence of a smoke ring indicates the item was slow smoked for a long period of time. Consumers sometimes mistakenly feel that the pink color of the smoke ring means the meat is undercooked. About Piggy's BarBQ Piggy's BarBQ was founded by Gary & Anita Hellyer.
